Friday is Pieday.

Last night I made an absolutely (in my own words) fucking marvellous fish pie for the hat and I. I don’t usually bother cooking anything which takes more than 30 minutes to prepare and cook unless i’ve got company, but I should think this is one of the best things i’ve ever made and so I thought I’d share the impromptu recipe - It’s very simple and doesn’t require anything annoying.

You will need

  • 300g smoked river cobbler (sans bone)
  • 1 White onion
  • 3 Large cloves of garlic
  • 2 Potatoes
  • 1 Sweet potato
  • 20g Root ginger
  • 2 Tablespoons dark soy sauce
  • 2 Teaspoons balsamic vinegar
  • 1/2 Teaspoon brown sugar
  • Salt, black pepper and mixed herbs to season
  • 50g Cheddar cheese
  • Knob of butter

Method

Peel and chop the potato and sweet potato and throw in a pan of boiling water with a pinch of salt.
While these are cooking, roughly chop the onion, and oh so thinly slice the ginger and garlic.
Once the potato is soft, drain the water, add butter and mash the holy hell out of it so it’s nice and smooth.

Turn the oven on to 180-200°C.

Mix up the garlic and onion and lay half of the mix into the bottom of your baking dish (mine is Pyrex because borosilicate glass is the shit) lay the cobbler on top of this and spoon the soy sauce on the fish, season with ground black pepper and mixed herbs. 
Add the rest of the onion/garlic and spoon on the balsamic vinegar and brown sugar.
Lay the mashed potato over this and smooth it over with a knife. Carve pictures of fish, boats, birds, phalluses, your own face (or whatever you feel confident to draw) into the top of the potato.

Cover tightly with baking foil and cook in the middle of the pre-heated oven for 60 minutes. Remove from the oven and take off the foil, sprinkle with cheddar and whack under the grill at 200°C until the cheese melts and goes crispy and golden.

Serve with a strong Kentish ale and a beautiful woman.

Unfortunately I was far too hungry and I ought to have had the hindsight to take a photograph of this pie, so instead here’s a picture of Hat looking rather content after polishing it off.
